Ingredients

4 ripe tomatoes (about 300 g)
1 small shallot
1 celery rib
2 rice cakes
q.s. extra virgin olive oil
q.s. white wine vinegar
salt and black pepper

Wash and peel the vegetables removing the stems from the tomatoes and the stalks from the celery. Chop roughly the tomatoes and cut into small cubes the celery and shallot. Gather all the vegetables in a bowl, add the crumbled galettes, salt and pepper. Add a dash of vinegar and plenty of oil, stir, and let it season for about 10 minutes. Serve in individual bowls and top with fresh basil if desired.
