Ingredients

100 g Originario rice
250 g 00 flour
150 g brown sugar
2 eggs
zest of half a lemon
1 teaspoon baking powder
a pinch of salt

Boil the rice and wait for it to cool. Add the other ingredients to the rice: flour, sugar, grated lemon peel, baking powder, salt and the eggs. Stir until smooth. Grease a baking sheet and arrange the mixture in well-spaced spoonfuls. Proceed in this way until the mixture is finished. Bake at 165° for 25 minutes. Bake and enjoy for breakfast or snack, perhaps with a glass of rice milk or juice.
