Rice with anchovies

Ingredients

400 g Carnaroli rice
4 salted anchovies
tuft of parsley
about ½ liter water
extra virgin olive oil
salt

<p>Chop the parsley, wash and bone the anchovies. In plenty of salted water, boil the rice until it is cooked al dente. Meanwhile, in a saucepan, dilute the anchovies in extra virgin olive oil, which should almost melt, then add the rice and chopped parsley. Stir to mix well and serve.</p>
