Roccamarina Rice Salad

Ingredients

500 g of parboiled rice
300 g tuna
4 diced tomatoes
6 anchovy fillets
18 olives
olive oil
salt
pepper
chopped parsley

Boil the rice in plenty of salted water and when it’s cooked drain and let it cool down under cold water. Drain again and place it in a bowl. Pour over the rice, tomatoes, chopped tuna, anchovies and olives cut into fillets. Season it with oil, salt and taste to see if more seasoning is needed. Cool it down in the refrigerator for an hour and before serving decorate with chopped parsley.
