Ingredients

100 g Originario rice
1 l fresh milk
100 g almonds
70 g candied citron
250g sugar
50g vanilla-flavoured sugar
5 eggs
lemon peel
icing sugar
liqueur (such as Maraschino) to wet the cake

<p>Cook the rice in the milk with the lemon zest which then should be removed. Let it rest for a few hours (preferably overnight) and then add the eggs, sugar, almonds and citron that should have been well chopped. Now pour the mixture into a well-buttered baking tray and bake in the oven at very moderate heat for about 50 to 60 minutes. Brush with liqueur, sprinkle with powdered sugar and serve warm.</p>
