Sardinian-style rice

Ingredients

400 g Carnaroli rice
200 g of semi-dried sausage
200 g of tomato pulp
1 slice of lard
1 pinch of saffron
2 tablespoons of grated pecorino cheese
1 small onion
1 l meat stock
extra virgin olive oil
salt and pepper

In a saucepan sauté the chopped lard and onion with two tablespoons of oil. Mix the chopped sausage, chopped tomato pulp and saffron. Brown well, season with salt and pepper and cook slowly. Add the rice, brown it and while continuously stirring add the boiling broth little by little. Before serving sprinkle with grated pecorino cheese.
