Rice Soup|with leeks|and citrus fruits




250 g of Vialone Nano rice
350 g of green part of leeks
500 ml of vegetable broth
1 lemon
1 knob of butter
salt and pepper

Slice finely the green part of the leek and keep the noble part aside. Melt the butter in a saucepan and brown the leeks. Add the rice and cook for a few minutes. Add the hot broth and let it cook. Grate the zest of the lemon and keep it aside. Squeeze the lemon and add the juice to the soup. Serve and top with lemon zest.
